How do you have your oyster?

Enjoy the plump and juicy flesh natural or cooked, with lemon or topped with one of our four serving suggestions below:

1. Lemon + Tabasco

Simple with a squeeze of lemon + a few drops of tabasco
 

2. Cucumber and Mint

1 Lebanese cucumber finely diced, handful on mint leaves finely sliced roughly and juice of half a lime.  Mix together and spoon over the freshly shucked oysters

3. Ginger and Chilli

1 tbsp fresh ginger, finely grated
120ml rice wine vinegar
1 red chilli, deseeded and finely diced
a sprig or two fresh coriander, finely sliced
1 tsp castor sugar
Mix all the ingredients in a small bowl and stir until sugar is dissolved. Drizzle over oysters and serve.

4. Champagne and Butter

In small saucepan, simmer 500ml of sparkling wine over medium heat until reduced by half.  Add 40g of diced unsalted butter and whisk butter melts and sauce is smooth.  Remove from heat, and stir through 1 tbsp chopped chives. Drizzle over oysters and serve.
